Frito Taco Casserole

Ingredients
- ½ cup diced onion
- 1 Tablespoon olive oil

1 clove garlic, minced

1 lb ground beef 80/20

1 1 oz. packet taco seasoning

1 10 oz. can refry beans, warmed and thinned a little with a bit of water
- 1 cup original Fritos (or more)
- 1 cup salsa, mild
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 6 oz. can slice black olives (optional)

2 cups iceberg lettuce, shredded

2 fresh tomatoes, diced to taste

2 green onions diced, optional
Topping
Directions
In a medium size frying pan sauté the onion in olive oil until soft.
Add the garlic and cook just until you smell it.
Add the ground beef. Cook and stir at medium heat breaking up the ground beef until fine. Drain any excess grease.
Add the taco seasoning and ¾ cup water. Stir and cook until bubbly. About 5 minutes. Set aside.
In a greased 9x13 in. baking dish spread out the warmed refried beans. Top with the Fritos, meat mixture, salsa, sour cream and half the shredded cheese.
Bake at 350 20-25 minutes until hot and bubbly.
Remove from heat and top with remaining cheese, olives, shredded lettuce and tomatoes and green onions.
Salt lightly with fleur de sel salt and fresh ground black pepper. Serve immediately.
